Turkey Quesadillas with Green Salsa
Since I recently learned what tomatillos were this recipe caught my eye when flipping through the Clean Eating (Nov/Dec 2010) Magazine. I cooked my turkey ahead of time and that made this a simple and fast dinner to prepare. My husband doesn't care for hot sauces so I made my salsa minus the jalapeno seeds and rind. I also substituted Gourmet Garden Cilantro instead of fresh and used the Mexican Cheese blend.
I really liked the flavor of the salsa and was pleasantly satisfied with just one serving. The husband gave it a thumbs up! Will definitely be keeping this recipe!

ReplyDeleteI adore tomatillos! I make salsa verde salad dressing using similar ingredients as you have done. :)
ReplyDeleteRE: keeping food warm, if you don't have any way to warm your food, you could make mac & cheese in a crock pot and heat/warm it during service. And as for aluminum pans, it would work fine, just be careful not to put too much hot water.
